Amy’s Cranberry Salad

No one in my family likes this except me… but that’s OK, I can eat it all!

In large bowl, combine until dissolved:

  • 1 small pkg. Cherry Jell-O
  • ¼ cup sugar
  • 1 cup boiling water

Add:

  • ¼ cup cold water
  • 1 Tbl. lemon juice
  • ½ small orange, ground
  • 1 cup raw cranberries, ground
  • ½ cup chopped celery
  • ½ cup chopped walnuts or pecans
  • 1 10 oz. can crushed pineapple with juice

Pour into serving dish and chill until set!

 

Easy way to grind berries and orange:

  1. Wash cranberries and orange
  2. Slice oranges into chunks and remove seeds
  3. Freeze berries and orange
  4. Grind in blender or food processor

    Amy! I’ll help you eat it. This sounds a lot like my mother’s recipe — that I now make, except I use lemon Jello. Yum!

      It is from Ohio, Mary! I think my mom got it from the Hill family at one time, they used to own Hill’s Sewing in the Plaza.
