Caprese Salad – with its ripe tomatoes, fresh mozzarella cheese and fresh basil – is one of my favorites. This recipe combines the same simple flavors in a warm dip served on crunchy baguette.

Caprese Dip

  • 8 oz. diced mozzarella cheese
  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh basil
  • Sliced baguette or cracker of your choice

Combine the first three ingredients in a lightly oiled 8 x 8″ baking pan. Season with salt and pepper to taste. Bake at 375 degrees for 20 minutes. Allow to cool slightly before serving with baguette or crackers.

I used cherry tomatoes; any variety will do. The tomatoes release their juice as they bake so you don’t need to add any oil, vinaigrette or dressing.

And I must confess: I didn’t serve this at my Neighborhood Cafe. I ate the whole thing for dinner! But I’m sure your neighbors will love it as much as I did.
