Ladies, here’s the recipe for Nan’s delicious Zucchini Bread! This recipe came from a friend of her mother. Don’t you love how women share all the good stuff?! Enjoy!

Zucchini Bread

(Makes TWO loaves)

3 eggs well beaten
2 cups sugar
1 cup oil
2 cups peeled and grated zucchini
2 tbs vanilla (I always add a little extra)
3 cups flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
3/4 tsp nutmeg
3 tsp cinnamon
1 cup chopped nuts or raisins or 1/2 cup each

Sift dry ingredients, add the rest. Place into 2 greased and floured loaf pans. Bake at 350 degrees for one hour.
